Summer Pasta Salad (yeah it’s vegan)

1 white onion

1 poblano pepper

2 jalapeño peppers

1/2 cup sliced olives

1 blanched chopped yellow beet

3 sticks celery

2 T fresh chopped dill

1 juiced lemon

2/3 cup vegenaise

2/3 cup vegan cream sauce

1 t. Colman’s (spicy) mustard

salt and pepper to taste

1 or 2 packages of cooked pasta (depending on how much pasta you want)

Instructions

Cook pasta according to directions and drain.

Chop all veggies very thinly sliced.  I use my slicing attachment on my Cuisinart and then pulse in the normal blade mode. Mix everything in a large bowl and then let it cool for 1-2 hours. Enjoy this spiced up version of pasta salad!

Didn’t even last a day in my house of consumers lol.
